Tofu Pasta

Ingredients:

  • 1 block firm tofu, pressed and crumbled
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 8 oz pasta

Process:

  1. Cook pasta according to package instructions. Drain and set aside.
  2. Heat olive oil in a skillet over medium heat.
  3. Add onion and garlic, sauté until softened.
  4. Add crumbled tofu, cooking until slightly browned.
  5. Add diced tomatoes, oregano, and basil. Simmer for 10 minutes.
  6. Toss cooked pasta with the tofu sauce.
  7. Serve with grated Parmesan cheese, if desired.
