Tofu Pasta
Ingredients:
- 1 block firm tofu, pressed and crumbled
- 2 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes
- 1 tsp dried oregano
- 1 tsp dried basil
- 8 oz pasta
Process:
- Cook pasta according to package instructions. Drain and set aside.
- Heat olive oil in a skillet over medium heat.
- Add onion and garlic, sauté until softened.
- Add crumbled tofu, cooking until slightly browned.
- Add diced tomatoes, oregano, and basil. Simmer for 10 minutes.
- Toss cooked pasta with the tofu sauce.
- Serve with grated Parmesan cheese, if desired.
